A warm, healthy breakfast to start your day…

As the weather gets colder more people turn to a hot breakfast to start their day. Although I would not recommend bacon and eggs each morning I do recommend starting your day with a warm breakfast that is nutrient dense and delicious. Below is a simple recipe that I enjoy on many cold fall and winter mornings that keeps me energized for work and morning workouts.

Steel cut oats w/ fruit and peanut butter (yum!)

As you may or may not know I’m a self proclaimed peanut butter addict and adding it to this recipe increases the protein content as well as the flavor. I often will prepare this recipe ahead of time to have in the fridge for a couple of mornings. The recipes serves 4.

1 C steel cut oats

3 C H2O

1 tsp cinnamon

2 tbsp honey

1/4 C raisins

1/4 C cranberries

1/2 tbsp peanut butter (all natural) per serving (I add this upon serving)

1/4 C diced fresh apple (a firm variety…fuji/honeycrisp/granny smith) (I also add upon serving)

Bring 3C of H2O to a boil and add steel cut oats. Reduce to a simmer and cook for approximately 20 minutes or until H2O is absorbed. Stir in cinnamon, honey, raisins and cranberry. When you are ready to eat, add 1/4 – 1/2 tbsp all natural peanut butter & 1/4 chopped fresh apple. Enjoy!

*As a side note, some studies have shown that consuming steel cut oats with caffiene can actually help burn fat.
