A cauliflower recipe to appeal to the masses

This recipe is quick and easy, as well as delicious. Its a great option to serve for people who are not big on vegetables. Enjoy!

Garlic Mashed Cauliflower

1 head of cauliflower (cut into florets)

1 tbsp olive oil

1 clove garlic, smashed

1/4C grated parmesan cheese

1 tbsp reduced fat cream cheese

1/2 tsp kosher salt

1/8 tsp fresh ground black pepper

1. Using a steamer, bring the water to a boil, then add cauliflower and cover. Steam until tender (about 10 minutes).

2.Heat olive oil in a small skillet over medium heat; cook & stir garlic until softened(approximately 2 min), then remove from heat.

3. Transfer 1/2 the cauliflower to a food processor: cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, parmesan cheese, cream cheese, salt and black pepper.
